Pumpkin-Khaju(Cashew Nuts) Fry Cashew and Pumpkin(Mathanga) fry 500 gm Pumpkin (skinned and deseeded, Mathanga)Cashewnuts (A handful)1/2 tbsp Oil1 tsp Mustard seeds1 tsp Cumin seeds (Jeerakam)3 - Garlic pods (minced)CorianderCurry leaves (A few)3 - Red chillies (Kollamulaku)1 tsp Turmeric powder1 - Chilly powder1/2 cup MilkSalt (As reqd) Grate the pumpkin and keep it aside. Heat oil in a pan or a kadai.Splutter mustard seeds and cumin seeds.Add curry leaves, minced garlic, red chillies, coriander and cashewnuts and saute for few minutes, till the nuts are slightly brown. Add the grated pumpkin and saute for 5 mins.Once the oil starts to leave, add turmeric powder, chilly powder and milk. Simmer it covered with a lid for 10 mins, until the water is fully dried up.Add salt and fry for 1 - 2 mins. :- Serve with both rotis and rice. Kerala
