  • Basmati rice - 2 cups
  • Lamb(chopped to small pieces) - 1 lb
  • Garlic pods(crushed) - 4 nos
  • Ginger(grated) - 2" root
  • Green chillies(finely chopped) - 4 nos
  • Unsalted cashew nuts(A handful) -
  • Onion(finely chopped, large) - 1 no
  • Turmeric powder - 1/2 tsp
  • Fresh coriander leaves(chopped) - 1 cup
  • Garam masala powder - 1 tbsp
  • Seeds from 8 Green cardamoms -
  • Lemon - 1 no
  • Salt(As reqd) -

Instructions
  1. Salt the water in a large pan and bring it to a boil.
  2. Add the basmati rice and cardamom seeds.
  3. Cook for 7 mins and then drain.
  4. Meanwhile fry the onion until translucent.
  5. Add the ginger, garlic, chillies and garam masala and stir fry for a further 2 mins mixing well.
  6. Add the lamb and seal well on all sides.
  7. Add a cup of water and simmer until the meat is tender.
  8. Add the rice, lemon juice and stir well.
  9. Lay the contents out into a baking dish and bake covered in the oven at 200 degrees for 20 mins.
  10. :- Serve with the crushed nuts and corinader leaves poured over.
