Ramzan Special Filled Banana

This is a very tasty and inevitable snack in the Malabar iftar cuisine. Its prepared by stuffing ripe plantain with coconut – nut mixtures and then dipped in a Maida batter and fried. It is mostly prepared during the Ramzan period.

Instructions
  1. Steam cook the bananas until it becomes soft.
  2. Beat the eggs together with sugar.
  3. Pour it into a preheated oiled pan. stir well.
  4. Cut the bananas from middle, as shown in the pictures.
  5. Fill them with the prepared egg mixture ( optional: it can be fried after filling, on a low flame, if required).
