For preparing rasagullas, boil the milk thoroughly till it turns slightly reddish in colour.Remove from fire & add lemon juice.
Spread a clean white muslin cloth over a vessels & strain the broken milk. Take the leftover pulp on the cloth, mix semolina to it & knead to a smooth dough.
Divide the dough into small balls. Take half the quantity of sugar, mix enough water & prepare a thick syrup.
Add the essence. In another vessels, prepare a thin syrup with the remaining sugar and water & drop the balls one by one.
Boil for some time. Then drop balls into the syrup (thick) prepared earlier. Chill & serve.
