Sadya Special Kootu Curry brings together a medley of vegetables, legumes, and coconut, creating a dish that is both nutritious and deeply satisfying.

Ingredients
  

  • 1/2 cup Chickpea Soaked in water for 8 hours
  • 1/4+1/4 tsp Turmeric powder
  • 1/2+1 tsp Salt
  • 1+1 cup Water
  • 1  cup Raw plantain Cut into small cubes
  • 1 cup Elephant foot yam Cut into small cubes
  • Curry leaves
  • 1/2 tsp Red chilly powder
  • 3 tbsp Coconut oil
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Cumin seeds
  • cup Grated coconut
  • ½ tsp Urad dal

For seasoning

  • 1 Tbsp Coconut oil
  • 1 Tsp Mustard seed
  • 3 Tbsp Coconut pieces
  • Curry leaves

Instructions
 

  • Pressure cook the Chickpea by adding turmeric powder, salt and curry leaves with required water.
  • Cook the yam and raw plantain by adding turmeric powder, red chilli powder and salt.
  • Heat a pan and splutter mustard seeds, urad dal and cumin seeds.Then add grated coconut and few curry leaves.
  • Saute till it becomes golden brown in colour.
  • Add the cooked veggies into cooked chickpeas.
  • Grind half of the roasted coconut and pour it into the curry. Mix well and bring it to boil.
  • Finally add the remaining roasted coconut and mix well.
  • Heat oil in a pan and roast coconut pieces till golden brown in colour. Finally, add some curry leaves and turn off the flame.
  • Add it into the curry.
