Clean the mutton and cut into one inch square pieces. Wash well and drain.
For preparing shahi mutton kuruma, first take a wide bottomed pan and pour ghee/oil. Fry cinnamon, cloves, mace and add onions.
When onion becomes soft, add ginger, garlic and saute till a fried smell comes.
Add drained mutton pieces and saute for 5 minutes in medium heat.
Lower the heat and add chilly powder, coriander powder and saute for 3 more minutes.
Add beaten curd, required salt and enough water for the mutton pieces to cook.
Allow the curry to boil and then lower the flame. Cover with a lid and cook till mutton is done.
Add cashew nut paste, garam masala and simmer for 5 more minutes.
Remove shahi mutton kuruma from fire. Before serving, heat the curry and add fresh cream. For garnishing, heat some ghee and fry cashew nuts and pour over the curry.
