  • Corn Starch - 1/2 cup
  • Flaked Coconut - 5 tbsp

  • Flour - 1/2 cup

Instructions
  1. For preparing Shrimp Fry, first mix together eggs and water. Set this aside.
  2. Place 1/4 cup of cornstarch in bowl for dusting of shrimp.
  3. Mix in a separate bowl, 1/4 cup (the remainder) of cornstarch, sugar, salt and flour and blend well.
  4. Heat oil for deep-frying.
  5. Roll shrimp in cornstarch mixture, then in egg and finally roll in coconut flakes.
  6. Place shrimp in hot oil and deep fry until done. Take care not to overcook them.
