For preparing simple chicken curry, pour boiling hot water on the chicken and keep it for about 10-15 minutes. Immerse it completely in hot water, so that it gets soft evenly.
Take the chicken out of the water, add oil, chicken masala, ginger-garlic paste and salt. Mix it well. Make sure there`s enough so that the chicken is nice and yellow brown. Allow it to marinate for at least 40 minutes.
While the chicken is marinating, fry the onions till golden brown in colour.
Add some chicken masala powder (very little - just enough to brown the onions) and fry a little more.
5)Toss in the tomato and fry till it becomes mushy.
If you want the gravy to be thick, put the onion + tomato mix into the mixer, along with green chillies, curry leaves and coriander leaves. Grind it to a fine paste
Pour this mixture into your kadai, add the chicken, add a little water, salt and sugar to taste. Allow it to simmer and cover the kadai with a lid for 10 minutes, stirring it in intervals.
