Simple Egg Tomato Curry
Hard boiled eggs cooked in ground
onion
mixture and masala powders

Tomato

Onions

Garlic
cloves
1
tsp
Red chilly powder
Turmeric powder
A pinch
1
tbsp
Coriander powder
Coriander leaves
chopped
Salt
As reqd
1
sprig
Curry leaves
1 1/2
tbsp
Oil
1/4
cup
Water
Instructions
For preparing simple
egg
tomato
curry, first grind together
onion
,
tomato
and
garlic
cloves
to a fine paste.
Heat
oil
in a pan and add
curry leaves
and the ground paste.
Fry for 2 minutes until the
oil
seperates.
Add the powder ingredients: red chilly powder,
turmeric powder
,
coriander powder
and required
salt
.
Add 1/4 cup of
water
and allow it to boil with a covered lid.
Add hard boiled eggs into the gravy and cook it covered for 5 minutes on low heat till the gravy acquires a required consistency.
Garnish the simple
egg
tomato
curry with chopped coriander and serve hot with chappathis/roti.
