Ingredients

Basmati rice

Onion
Mint leaves
An handful
Coriander leaves
An handful
Ginger
Garlic
paste - 1/2 tsp
3

Green chillies
finely chopped
Salt
As reqd

Oil
Water
Instructions
Wash and soak the basmati rice for 5 minutes.
Heat some
oil
in a vessel.
Add chopped
onion
and saute till it turns very soft.
Add
ginger
-
garlic
paste and saute for 2 minutes.
Add the rice and continue to fry.
Add
water
in the proportion; for 1 cup rice : 2 cups of
water
.
Add
mint leaves
, coriander leaves, chopped
green chillies
and
salt
.
:- We can also add
green peas
,
carrot
and any other vegetables as required.
Cook till the
water
gets fully absorbed.
Transfer the contents to a serving plate or bowl.
:- Serve hot with Stuffed
brinjal
or Raita.
