Snow Balls A party-dessert made with egg whites & milk For Snow balls:-5 nos Egg whites1/2 litre Milk1/2 cup SugarFor garnishing:-1/2 tsp Instant coffee powder For making Snow Balls:- 1)Carefully separate the egg whites from the yolk. :- Keep by the egg-yolks for the custard.Vigorously beat the egg whites(preferably with an electric egg-beater/mixer), until it is stiff. While beating the egg white, gradually pour in the sugar into the mixture, a small portion at a time. Boil the milk in a large & flat bottomed pan. Scoop out (prerrably with a round-shaped spoon to form the shape of a ball) one spoonful of the stiffened eggwhite mixture and put into the milk. Lower the flame. Turn the eggwhite-ball. :- The balls will cook within 1 minute. When fluffy and increased in size, carefully take out the ball from the milk and keep by in a plate. Repeat the process with the remaining egg-white mixture and make around 15 - 20 balls. For making the custard:- 1)Reduce the milk to 1/2 litre and allow it to cool at room remperature. Lightly beat the egg yolks. Mix in the sugar, saffron (soaked in lukewarm milk for 5 mins) and cinnamon powder. Pour in the egg-yolk mixture into the milk.Cook this mixture on a very low flame. Stir continuously, until the mixture is reduced to the consistency of custard. Pour the custard in a flat bottomed (preferably) decorative plate. Cover the plate with the custard. Make a plane base with the custard and on top of it, carefully place the snow balls side by side. Sprinkle the snow balls with instant coffee powder.:- Serve chilled. American
