In a medium bowl, mix together corn flour and water until thoroughly combined (like you make chappathi atta- this atta is soft, so add water slowly and as required to form a firm dough).
Cover and keep aside to rest for 30 minutes.
Divide dough into 16 equal - size balls. Using a rolling pin, roll out the balls, like you do a chappathi.
Preheat a cast iron griddle to medium - high.
Immediately place tortilla on the griddle and allow to cook for approximately 30 seconds, or until browned.
Turn tortilla over to brown on second side for approximately 30 seconds more, then transfer to a casserole.
