For the spicy prawns:-
  • Chilly powder - 1 tsp
  • Prawns(shell and heads removed) - 5 nos
  • olive oil - 2 tbsp
  • Baby spinach(A small bunch) -
For the mango chutney:-
  • Honey - 3 tbsp
  • White vinegar - 1 tbsp
  • Ripe Mango(peeled and cut into small dice) - ½ of
  • Spring onion(chopped) - 1 no

Instructions
  1. Coat the prawns in the chilli powder.
  2. Heat the oil in a small pan.
  3. Fry the prawns for 2 mins or until cooked through.
  4. For the spinach, heat the oil in a sautT pan and add the spinach and cook for 1 - 2 mins.
  5. For mango chutney:- 1)Place all the ingredients in a pan and gently simmer over a low heat for 4 - 5 mins.
  6. Transfer the spinach to a serving plate and serve the prawns on top.
  7. :- Serve the mango chutney alongside.
