Instructions
  1. Heat oil in a pan and add whole jeera. After it crackles add minced garlic and fry till it turns golden brown in color.

  3. Add whole red chillies, cinnamon, cloves and onions and fry for 6 - 8 minutes.
  4. Enter Step
  5. Stir fry the masala for 3 - 4 minutes till the oil separates and the masala is cooked.
  6. Add chopped spinach and cubed brinjal and mix well.
  7. Cover the pan and cook on a lower flame for 15 - 20 minutes stirring occasionally till the vegetables are cooked.

  9. Serve with roti / paratha.
