Spinach Pinwheels Easy snack with Spinach(Paalak) 1 pkt Pepperidge Farm pastry sheets (it has 2 sheets in it)1 pkt Frozen chopped spinach1 no Onion (finely chopped)4 nos Green chilliesGinger (garlic paste - 1 tsp)1 tsp Cumin powder (Jeerakam)1 tsp Chilly powder1/2 tsp Pepper powder4 tbsp Mayonnaise2 tsp Oil Allow the pastry sheets to thaw at room temperature for at least 30 mins. Heat oil in a pan or a kadai.Fry the onions, till light brown. Add all the spices, ginger-garlic paste and green chillies. Stir for a minute. Add the thawed spinach and stir well for about 5 mins or until it cooks and the mixture becomes dry. After it cools, add the mayonnaise and mix well. Spread half the mixture inside one pastry sheet leaving a one inch border on all four sides. Carefully start rolling it up tightly like a jelly roll starting at one of the longer sides. Wrap it in a plastic wrap and freeze until firm (about 1 hour). Repeat with the other sheet. Preheat oven to 375 degrees. Cut the rolls into 1/2" thick slices. Spray a cookie sheet with cooking spray and arrange the pinwheels on it an inch apart. Bake for about 20 mins or until they turn golden brown.:- Makes about 30 pinwheels. North Indian
