Stew Potatoes cooked in coconut milk 2 nos Potato (boiled and mashed)Thick coconut milk (As reqd)Thin coconut milk (As reqd)2 nos Green chilliesGaram masala powder (A pinch)1/4 tsp Pepper powderSalt (As reqd)1 tsp Coconut oilCurry leaves (A few)1/2 tsp Mustard seeds5 nos Pearl onions (cut into pieces, Kunjulli)1/2 tsp Cumin seeds (Jeerakam) Heat oil in a pan or a kadai.Splutter mustard seeds.Add cumin seeds, chopped small onions, green chillies and curry leaves.When the onions turn golden brown, add the mashed potatoes.Add the second extract or thin coconut milk.Add a pinch of garam masala powder and salt.Allow it to boil.When it starts to boil, add the first extract or the thick coconut milk.Before it starts to boil, switch off the flame.Sprinkle some pepper powder and mix well.:- Serve with vellayappams.
