Strawberry Terrine

A colourful dish with red currants and strawberries

Ingredients
  

  • 400 g Strawberries chopped in 2 halves
  • 3 nos Jelly tablets
  • 100 ml Water
  • 80 g Sugar
  • 200 g Frozen red currants
  • 100 g Single cream cold

Instructions
 

  • For preparing strawberry terrine, soak the jelly in cold water.
  • Boil water and sugar in a saucepan. Allow it to simmer for 5 minutes.
  • Add in the red currants and leave it to simmer for 1 minute. Remove it from the flame and blend it.
  • Beat in the drained jelly with a hand whisk and allow it to cool.
  • Whip the cream until light and fluffy.
  • Mix in the whipped cream with the redcurrant puree.
  • Grease the terrain with butter and pour a little red currant puree.
  • Leave it to set for 5 minutes in the freezer.
  • Cover it with a layer of strawberries and finish with a layer of cream on top.
  • Tap the sides of the terrain lightly, so that all the ingredients are evenly spread.
  • Cover with a lid and chill it for 6-8 hours.
  • Strawberry terrain is ready. Cut and serve the terrain with strawberry puree.
