Sukha Aloo Bhaji (step By Step Photos)

Ingredients
  

  • 8 medium size potatoes boiled and cubed
  • 10-12 nos curry leaves
  • ½ ginger chopped
  • 4-6 green chilies chopped
  • ½ tsp rye
  • ½ tsp whole jeera
  • ½ tsp urad dal
  • ½ tsp haldi powder
  • 3 tbsp oil
  • Salt

Instructions
 

  • Boil the potatoes and cut into cubes.
  • In a mortar and pestle mash the chopped ginger, green chilies and salt to a coarse paste.
  • Heat oil in a non stick pan. Add rye and when it crackles add the whole jeera and urad dal and fry till the dal turns a golden brown color.
  • Add the curry leaves and the minced ginger , green chilies and salt paste and stir fry for 1 minute. Add the haldi powder and fry for one more minute.
  • Add the boiled potato cubes and mix well till the potatoes are coated with the masala.
  • Serve hot with puris and a wedge of lime.
