For preparing sun rise pudding, soak the bread pieces in milk for 15-20 minutes and beat well.
Stir in the corn flour, egg yolks, essence, sugar and blend very well.
Heat 1 tsp of sugar in a mould till it caramelizes. Cool and pour the bread mixture into the mould. Bake in a moderately hot oven for about 30 minutes.
Mix together the jam & egg whites and spread this mixture over the top of the pudding.
Bake for another 10-12 minutes.
Sun rise pudding is ready. Serve when it cools and cut into slices.
