Sweet Potato Egg Masala Curry

Delicious Sweet potato Egg curry. Special version of Kerala Egg roast.

  • Cut boiled eggs in half
  • 1 tbsp chilly powder, bit turmeric powder, salt and half tsp pepper powder and make a paste with water.
  • Dip the sliced eggs in this paste and fry in 1 or 2 tbsp coconut oil for 3 minutes (place sliced eggs upside down first and fry. Turn other side and turn off flame) Set aside.
  • On this pan fry grated coconut till slight brown color. Add garam masala, corriander powder, chilly powder, half tsp turmeric powder. Fry for a minute. Remove from flame and grind it to make a paste after cooling.
  • Splutter mustard in oil and add green chillies, curry leaves and sliced onion. Saute it few minutes. Add the masala paste and tomato. Saute a minute.
  • Add sliced Sweet potato and mix well. Add vinegar and 2 cups of water. Cover and cook till sweet potato become soft.
  • Add fried eggs and turn off the flame. Cover it and wait few min to serve!!!

Notes

Quantity of masala and chilly may reduce to make less spicy.
