1 tbsp chilly powder, bit turmeric powder, salt and half tsp pepper powder and make a paste with water.
Dip the sliced eggs in this paste and fry in 1 or 2 tbsp coconut oil for 3 minutes (place sliced eggs upside down first and fry. Turn other side and turn off flame) Set aside.
On this pan fry grated coconut till slight brown color. Add garam masala, corriander powder, chilly powder, half tsp turmeric powder. Fry for a minute. Remove from flame and grind it to make a paste after cooling.
Splutter mustard in oil and add green chillies, curry leaves and sliced onion. Saute it few minutes. Add the masala paste and tomato. Saute a minute.
Add sliced Sweet potato and mix well. Add vinegar and 2 cups of water. Cover and cook till sweet potato become soft.
Add fried eggs and turn off the flame. Cover it and wait few min to serve!!!
Quantity of masala and chilly may reduce to make less spicy.
