Sweet Puttu is a variation from the usual Puttu dish with a sweet flavor and taste. The mildly sweet Sweet Puttu is usually prepared during festive occasions like Navarathri. Sweet Puttu is unique and tasty with cooked rice flour mixture blended with jaggery solution. Sweet Puttu requires no side dishes or accompaniment and even kids love the dish. Instructions
  1. For preparing Sweet Puttu, first fry the rice flour till it turns colour to light red.
  2. Add salt to it along with a little warm water and mix well in the same way you make the usual puttu.
  3. Make puttu with the above mixture in the usual way using "puttukutti".
  4. Heat up a pan.
  5. Add jaggery and just enough water so as to get the jaggery dissolved.
  6. Allow it to boil till it reaches a three threads` consistency.
  7. :- To make the consistency test, drop a small amount of the above jaggery mixture into a vessel filled with water. Pick it up and if u can see it showing three threads, then it is ready.
  8. Add the above puttu(crumbled) and ghee into the above jaggery syrup.
  9. Mix the whole thing very well.
  10. Add cardamom powder and mix well again.
  11. Add roasted cashews, if desired.
  12. :- Sweet Puttu can be stored for around 3 - 4 weeks.

Can we also use grated coconut for consuming immediately (not for storing that long)? N.Nalini
