Tamil Nadu Chicken Biriyani(Kozhi Biryani) Good biriyani 1 kg Chicken4 cups Basmathi rice3 tsp Coriander powder3 tsp Chilly powder1 tsp Garam masala powder2 nos Cinnamon (Karugapatta)2 nos Cardamom (Elakka)4 nos Cloves (Grambu)4 nos Bay leaf (Vazhana/Karuga ela)1 small Garlic1 medium Ginger1 no Onion (big)Coriander (A small bunch)1 no Tomato (medium)5 nos Chillies4 tsp Ghee & Oil Peel the skin from the chicken and cut into small pieces.Add all powders and salt and cook in a separate pot.Grind chilli, garlic, ginger, onion, tomato and coriander bunch (grind everything separately).Heat ghee & oil in a cooker.Add cinnamon, cardamoms, cloves, bay leafs and all the ground ingredients.Fry on a medium fire till the oil comes out.When it becomes yellowish, add the cooked chicken and mix it for 3 mins.Add water.:- For 2 cups of rice, add 3 cups of water.:- Some times in the cooked chicken itself will have some water, so please measure.When it boils, add rice and close the cooker with the weight on.Keep it for 5 mins.Mix well.
