Tamil Nadu Mutton Briyani

This recipe is for Tamil Nadu style mutton biryani, where the different spices and herbs are first ground to release all their flavors. then sauteed and cooked with the mutton to produce a flavorful biryani.

Ingredients
  

  • Mutton 1 kg
  • Briyani Rice 1 kg
  • Onion 3 no.
  • Tomato 2 no.
  • Ginger Garlic paste 1/2 cup
  • Green Chili 5No.
  • Mint leaves 1/4 cup
  • Coriander Leaves 1/4 cup
  • red chili powder 1 tsp
  • turmeric powder 1 tsp
  • salt to taste
  • oil 6 tsp
  • ghee 3 tsp
  • cinnamon 2 small piece
  • clove 4 no.
  • ani seed 2 no.
  • cardamon 2 no.
  • bay leaf 2 no.
  • lemon 1 no.
  • curd 3 tsp

Instructions
 

  • Chop the onion, Green chili coriander leaves, mint leaves and tomato
  • clean and wash the mutton
  • In a cooker Heat the oil and ghee and temper the bay leaf, aniseed, clove and cinnamon, cardamon
  • add onion and saute it until the onion turn into brown
  • add green chili, coriander leaves and mint leaves and mix well
  • add tomato and mix well until the tomato get cooked
  • add ginger garlic paste and mix well and allow to cook until the raw smell goes out
  • add red chili powder, salt , turmeric powder, curd, squeeze the lemon and mix well and allow to cook for 5 minutes
  • now add mutton and mix well and allow to cook for 10 minutes
  • add required water for mutton to get cook
  • once the mutton get cooked well add water for rice in 2 : 1 ratio and allow to boil
  • now add briyani rice and keep the flame in low until the rice get 1/2 cooked. then close the lid and allow for 5 minutes to get cook, turn off before the whistle come
  • Once dum comes down remove the lid mix well
  • now tamil nadu mutton briyani is ready
