  • For preparing tans special chicken curry, wash the chicken pieces properly and keep it aside.
  • Heat oil in a pan, saute onions, garlic, ginger, green chillies and salt until the onions become light brown in colour. Remove it from flame and allow it to cool.
  • Grind the above into a fine paste with fenugreek seeds and mustard paste. Keep this fenugreek mixture aside.
  • Meanwhile cut the tomatoes and saute it in a pan with little water. Grind it to make a fine puree.
  • Heat oil in a vessel and sautT cinnamon, cardamom and cloves.
  • Then add split red chillies and curry leaves. Allow it to splutter on low flame.
  • Then add in the fenugreek paste and saute it for 5 minutes on medium flame.
  • Pour in the tomato puree and saute for 2 minutes.
  • Add in chilly powder, turmeric powder and coriander powder. Saute it for 5 minutes.
  • Now add in the chicken masala powder and garam masala. Saute for another 2 minutes.
  • When the gravy begins to simmer, pour in the tamarind water, chicken pieces and 1/2 cup of water. Allow it to cook with a closed lid for 10 minutes.
  • Pour tomato sauce to the chicken curry and mix well.
  • Garnish with coriander leaves and remove it from the flame.
  • Tans special chicken curry is ready. Serve hot.
