Tasty Tomato Rice

Tomato rice prepared in a simple way

Ingredients
  

  • 6 nos Tomatoes chopped, medium
  • 2 1/2 cup Basmati Rice
  • 5 cups Water
  • 1 no Onion finely chopped
  • Ginger garlic paste - 2 tbsp
  • 1 no Green chilly slit
  • 1/4 tsp Turmeric powder
  • 1/4 tsp Fennel seeds powder Perinjeerakam
  • 1/4 tsp Pepper powder
  • 6 pieces Cinnamon Karugapatta
  • 2 nos Bay leaf Vazhana/Karuga ela
  • 6 nos Cloves Grambu
  • 5 nos Cardamomseeds Elakka
  • 2 nos Mace Jathipathiri
  • 1/2 tsp Cumin seeds sajeerakam/biriyani jeerakam
  • 2 tbsp Clarified butter/ghee
  • 15 nos Curry leaves – 10
  • 2 tbsp Coriander leaves chopped
  • 2 tbsp Pudina leaves chopped
  • Salt As reqd

Instructions
 

  • Clean and soak the rice in water for 30 minutes. Drain the water and leave it for drying.
  • Heat clarified butter or ghee in a pan.
  • Add cinnamon, bay leaf, cardamom seeds, cumin, cloves and mace.
  • Add onions and saute till it turns golden brown in color.
  • Add ginger-garlic paste and sautT for 2 minutes.
  • Add chopped tomatoes, green chilly, curry leaves and little salt.
  • Saute until the oil separates.
  • Add chopped pudina leaves.
  • Add rice and sautT till rice turns translucent.
  • Add water and allow it to boil.
  • When the water comes to a boil, add salt required for rice.
  • Cover the pan and cook in low flame until the rice is done.
  • Garnish with coriander leaves. Serve with salad & pickle.
