Thenga Aracha Vendakkaya Curry is a simple and easy okra curry prepared with coconut and spices flavor. This is one of the favorite and delicious vegetable stew in Kerala Cuisine. Okra is cooked in the tamarind with coconut spices mixture having a nice aroma and texture. It can be served as a side dish for appam, chapati or with rice.
Grind the Coconut along with Mustard Seeds and required quantity of water and keep this paste separately
Clean, wash and cut the Lady’s fingers (Vendakkaaya) in medium size pieces and keep them aside.
Heat Oil in a Cheenachatty and add the chopped Onion, Ginger and Green Chilli pieces into this hot Oil and stir it well.
After about five minutes, add the Lady’s finger (Vendakkaaya) pieces into this mix and stir it. When the colour of the Chopped Onion, Ginger, Green Chilli and Lady’s finger turns into golden, add Red Chilli powder and Salt also and stir the mix further.
Then Add the Coconut paste, Tamarind syrup and Jaggery also (if necessary add some water also) and stir the mix well.
Cover the Cheenachatty with a Plate/lid and allow to cook the mix in medium flame (it will take about 10 minutes to cook the mix properly). After about 10 minutes, remove the plate/lid and if the mix is cooked well, change it into a cooking vessel.
Thenga Arachha Vendakkaaya Curry is ready. This Curry can serve as side dish with Chappathi/Poori/cooked rice etc.
