Toffee Pudding is a luscious and sticky pudding sweetened with creamy condensed milk and caramel. A touch of china grass ensures a smooth and stiff texture richened with a generous sprinkling of crushed chocolate biscuits. Now, this is a unique pudding that will win your heart and mind. Toffee Pudding has a soft, decadent and almost chewy texture and flavor of toffee or caramel. Although Toffee Puddings do not call for a spice, you can compliment a small amount of clove, cinnamon and nutmeg into the pudding that makes it a variety dish. These subtle flavors makes Toffee Pudding more interesting adding a subtle flavor of spices which will complement the sweetness. But I haven’t included spices in this recipe. That is optional based on your preference. Yummy Toffee Pudding has a Canadian origin perhaps invented during the days of Second world war and it was much different from what we cherish today. The ingredients were much different and was termed STP or Sticky Toffee Pudding in earlier days.

Toffee Pudding can also be served with a dollop of ice-cream that makes it more tempting especially for kids. Toffee Pudding is a kind of cross between a cake and a pudding. There is nothing better on a cold wintry day other than curling up with a bowl of this delicious, moist and soft desert. Toffee Pudding

Ingredients
  

  • 2 cups Milk
  • 1/4 cup Sugar
  • 1/2 cup Water
  • 5 grms China grass
  • 1/4 cup Condensed milk
  • 1/4 cup Milk powder

Instructions
 

  • In a medium saucepan over medium heat, add sugar and 3 tbsp water. Bring to a simmer over medium heat, stirring every often until sugar is dissolved, approximately about 5 minutes. Increase heat to medium-high and cook until deeply golden, without stirring, 4 to 5 more minutes.
  • Once caramel is a deep copper color, pour condensed milk and immediately stir, Mixture will bubble up so be careful! Turn off the flame.
  • Pour milk into a saucepan, add milk powder and mix well. Bring it to boil
  • Mean time, melt the china grass in 1/4 cup water and pour it into the boiling milk.
  • Pour that boiled milk into the previously prepared toffee mixture. Turn the heat on. Stir it continuously till the toffee is completely melted. When the mixture starts to thicken, turn off the flame. Pour it into a pudding tray and refrigerate for 4-5 hours.
  • Garnish Tofee Pudding with crushed chocolate biscuits and serve.
