  • Cook rice and allow it to cool by spreading it over a broad plate and mix little ghee so that grains will separate.
  • Cut onions lengthwise. Cut tomatoes finely and chillies into long pieces. Chop garlic and keep them aside.
  • Heat oil and ghee(about 1 tsp ghee and 3 tsp oil) in a frying pan.
  • Add the ingredients for seasoning followed by chillies, garlic and onions. Fry till onions become translucent.
  • Add tomatoes and cook till it becomes soft.
  • Add salt, a pinch of sugar and masala powder.
  • Add rice to this and mix well till rice becomes hot.
  • Finally, add grated coconut and coriander leaves.

    Liked this recipe for its simplicity and ease in preparation. Instead of fresh coconut, I added 3 tblsp dessicated coconut with the tomatoes and it was yummy!
