Tomato Bhath Rice n tomato in spices 1 cup Rice2 nos Tomatoes (big)1 no Onion2 nos Garlic pods3 nos Green chilliesSalt (As reqd)Sugar (A pinch)3/4 tsp Masala powder (any)1 tbsp Ghee3 tsp OilGrated coconut (As reqd)Coriander leavesFor seasoning: 1/2 tsp Mustard seeds1 tsp Bengal gram (Kadalaparippu)1 tsp Black gram (Uzhunnuparippu)3 nos Cloves (Grambu)Cinnamon (A small piece, Karugapatta)1 no Cardamom (Elakka)1/4 tsp Turmeric powder Cook rice and allow it to cool by spreading it over a broad plate and mix little ghee so that grains will separate. Cut onions lengthwise. Cut tomatoes finely and chillies into long pieces. Chop garlic and keep them aside.Heat oil and ghee(about 1 tsp ghee and 3 tsp oil) in a frying pan. Add the ingredients for seasoning followed by chillies, garlic and onions. Fry till onions become translucent. Add tomatoes and cook till it becomes soft.Add salt, a pinch of sugar and masala powder. Add rice to this and mix well till rice becomes hot. Finally, add grated coconut and coriander leaves. North Indian

Liked this recipe for its simplicity and ease in preparation. Instead of fresh coconut, I added 3 tblsp dessicated coconut with the tomatoes and it was yummy!
