Tomato Curry

The curry is delicious and goes well with freshly cooked rice or flat bread. when there are no veggies in the kitchen, i prepare this vegan tomato curry along with steamed rice

Instructions
  1. chop the tomato
  2. chop the onion, green chili and red chili,
  3. heat the oil and temper the bay leaf, cinnamon, cardamom, clove, aniseed
  4. add onion, red chili and green chili and saute it for 3 mins
  5. add ginger garlic paste and turmeric and mix it
  6. add tomato and mix well
  7. add coriander and mint leaves and mix well
  8. add salt and red chili powder and mix it and allow to cook for 15 mins
  9. add one glass of water and mix it
  10. allow to cook until it becomes thick consistency like a curry
  11. now tomato curry is ready to serve. serve with hot rice
