Uppumanga Aviyal Tasty aviyal made from raw mangoes kept in brine (in jars) for long time 3 nos Raw mangoes in brine (big)1 cup Grated coconut1 no Small onion (Kunjull)Cumin seeds (A pinch of 2 or 3, Jeerakam)1/2 tsp Red chilly powder1/2 tsp Turmeric powder1 - Coconut oilCurry leaves (A few)Water (As reqd) Take the mangoes from the jar and wash them well with water.Cut them into small pieces (like cutting for aviyal).Grind together coconut, small onions, cumin seeds, chilly powder and turmeric powder into a coarse form.Put the cut mangoes into the ground mixture in a boiling vessel.Add curry leaves and mix it well with little water as required for boiling only.Keep it for sometime on a medium flame until the mangoes get cooked well and keep it there until all the water gets evaporated. Stir occasionally and care should be taken not to get the mixture stick into the bottom of the vessel when the water starts evaporating.Switch off the flame and add coconut oil into the aviayal mixture and mix it well.Transfer it into a bowl.:- Serve with rice.
