Vaal beans (Lablab Beans) : 100 gm
Potato
cubed : 1 no

Coriander leaves : 3

Green chilies : 7
Onion
: 1 no
Garlic
ginger
paste : 1 tsp
Coriander seeds
: 2 tsp
Cumin seeds
: 1 tsp
Turmeric powder
: ½ tsp
Sugar
: 1 tsp

Oil
: 2
Salt
: as reqd
Instructions
Grind the coriander leaves, green chilies,
garlic
ginger
paste,
coriander seeds
,
cumin seeds
and
salt
to a fine paste.
Heat
oil
in a pan, add
onion
and fry the ground masala paste with ½ tsp
turmeric powder
and a little
water
.

Cover the pan and cook till the
oil
separates from the masala.
Add the cubed
brinjal
,
potato
and vaal.

Add ½ cup
water
, cover the pan and cook on a low flame for 15 - 20 minutes till the vegetables are cooked.
Serve with roti.
