  • Coconut milk(thick) - 1 1/2 cup
  • Sugar(sweet as desired) - 1/3 cup
  • Cardamom powder(Elakka podi) - 1 tsp
  • Cashew & raisins(I added only cashews) - 1/4 cup
  • Yeast - 1 tsp
  • Salt(A pinch) -

Instructions
  1. Prepare the thick coconut milk(I have used the maggi milk powder) using hot water.
  2. Mix the rice flour slowly into it and make a thick batter. Add this into the blender to make it a smooth paste.
  3. Add in the sugar, salt and cardamom powder.
  4. Mix the yeast in lukewarm water (about 20 ml) and add to the batter.
  5. Ferment for about 4-5 hours. Stir well and check the salt and sugar, adjust if required. Add the half of cashews & raisins mentioned.
  6. Grease a plate or the idli moulds with butter or ghee. Pour the batter into it.
  7. Steam in a steamer or idli cooker for 15 minutes on medium flame.
  8. Open the lid. You can see the cake puffed up. Add the remaining cashews on top and steam for another 5 minutes.
  9. Remove from flame and let it cool down. Cut into pieces.
  10. Serve as breakfast or as snack.
