Vattayappam - Traditional Snack A traditional Kerala snack 2 cups Rice flour (Ari podi)2 cups Grated coconut1/2 cup Sugar2 tbsp Semolina (Rava/Sooji)1/2 tsp Yeast1/2 tsp SugarRaisins(Onakkamunthiri) for garnishing4 nos Cardamom (Elakka)Salt (As reqd) Cook rava with 2 glasses of water till it becomes soft & loose.Let it cool.Add 1/4 glass of lukewarm water to yeast followed by 1/2 tsp of sugar.Allow it to rise.Grind the coconut with enough water & keep aside.Take 2 cups rice flour in a vessel, add rava & mix well.Add yeast & mix well.Add ground coconut & mix well.Crush the cardamom and add it to the batter.:- Make sure that the batter is not too loose. It should have a medium consistency.Keep it for 3 hrs.After 3 hrs, add 1/2 cup of sugar or more if reqd, followed by salt & stir well.Apply a liitle ghee/oil in a cake tin & pour the batter into it.Put some raisins on top.Steam it for 20 - 25 mins.:- You can also use idli plates to steam it.:- For more recipes visit http://www.mariasmenu.com/ Kerala
it came out really well. thanks.a little tip, if you keep the mixture in the preheated oven at the lowest temperature(it was 50 degrees in mine) you can reduce the time from 3hrs to 1 hour after mixing the ingredients.
