1/2 cup Carrot (grated)1/2 cup Pineapple (finely chopped)750 g Sugar4 cups Coconut milk2 cups Corn flour (paste)1 cup Tapioca (cooked and mashed)Dry fruits (As reqd)250 g Ghee For preparing veg fruit delight, fry carrot and pineapple in ghee.Then add sugar and coconut milk. Sir well.Add in corn flour paste and tapioca. Stir continuously till it becomes thick.Convert it into a serving bowl and garnish with dry fruits.Veg-fruit delight is ready. Serve chilled. Kerala
