Veg Kuruma Tamil Nadu Style 2 nos Carrots (cut into small cubes, medium)1 no Potato (cut into small cubes, medium)1/4 of Cauliflower (florets separated, medium)1/4 cup Green peasYou can more vegetables if you like1 no Onion (chopped, big)3 - Green chillies1 no Tomato (small)Masala mix:Cardamom, Clove, Cinnamon, Aniseed, Poppy seeds etc (for grinding - 2 1/2 spoons of the mixture)Ginger (garlic paste)1/2 cup Coconut1/4 cup Fried Channa (Pottu kadala)2 tbsp Oil1/2 tsp Chilly powder1/4 tsp Turmeric powderSalt (As reqd)Coriander leaves for garnishing Finely grind the tomato, coconut, masala mix and fried channa (soak the pottu kadala for 10 minues before grinding).In a thick bottomed pan, fry the onions and green chillies.Add ginger-garlic paste, chilli powder and turmeric powder and saute it.Add the washed vegetables and slightly fry them too.When they are half done, add the ground paste and 2 1/2 cups of water, salt to taste and close and cook on low flame.When everything is cooked well, mash a few of the potato pieces into the gravy to thicken it, check salt and add more and mix if needed.Transfer it to a serving bowl and sprinkle coriander leaves on it.:- Serve hot with chapathi or porotta.
