Vegetable Curry Easy Vegetables in coconut milk 3 cups Mixed vegetables (chopped) (Carrot, Beans, Peas, Potato, Cauliflower)2 nos Onion (medium)2 to Garlic pods2 nos Green chillies1" piece Cinnamon (Karugapatta)3 nos Cloves (Grambu)25 gm Cashew nuts25 gm Raisins (Kismis)1 tbsp Poppy seeds (Khashkhasha)2 cups Coconut milk (medium thick)2 tbsp GheeSalt (As reqd)Coriander leaves (As reqd) Boil the mixed vegetables.Soak cashew, kismis and poppy seeds for 1 hr.Grind it along with onion, garlic, cloves, cinnamon and green chillies.Heat ghee in a pan.Fry the ground masala for 2 mins.Add the boiled vegetables.Add salt and mix well.Add coconut milk and allow it to boil.Add coriander leaves.:- Serve hot.
