  • Long grain brown rice(washed and drained) - 1 cup
  • Almonds(Few) -
  • Onion(chopped) - 1 no
  • garlic(crushed) - 1 no
  • Green beans(chopped) - 50 g
  • Zucchini(chopped) - 50 g
  • Celery stick(chopped) - 1 no
  • Broccoli florets - 50 g
  • Currants - 1 tbsp
  • Green pepper(chopped) - 1 no
  • Orange Rind(grated) - 1 tbsp
  • Orange juice - 1 orange
  • Bay leaf - 1 no
  • Tamari soy sauce - 3 tbsp
  • Boiling water - 300 ml
  • olive oil - 1 tbsp
  • Salt(As reqd) -

Instructions
  1. For preparing vegetable pilaf, first heat olive oil in a large saucepan and saute chopped onion for a few minutes, stirring occasionally.
  2. Add crushed garlic, almonds, rice and saute for 2 minutes.
  3. Add chopped green beans, celery, broccoli florets, currants, green pepper, grated orange rind, orange juice and bay leaf. Bring to boil and simmer for 30 minutes with a covered lid.
  4. When rice is cooked, add tamari soy sauce and heat for a few minutes. Remove the bay leaf when rice is done.
  5. Vegetable pilaf, a tasty nutritious dish is ready. Serve hot.
