For preparing vegetable pilaf, first heat olive oil in a large saucepan and saute chopped onion for a few minutes, stirring occasionally.
Add crushed garlic, almonds, rice and saute for 2 minutes.
Add chopped green beans, celery, broccoli florets, currants, green pepper, grated orange rind, orange juice and bay leaf. Bring to boil and simmer for 30 minutes with a covered lid.
When rice is cooked, add tamari soy sauce and heat for a few minutes. Remove the bay leaf when rice is done.
Vegetable pilaf, a tasty nutritious dish is ready. Serve hot.
