  • Sweet potato(boiled, peeled and chopped, Madhura Kizhangu) - 2 nos

  • Peanut(roasted) - 2 tbsp
  • Cucumber(chopped) - 2 nos
  • Thick curd - 2 cups
  • Coriander leaves(chopped) - 2 tbsp
  • Green chillies(finely chopped) - 2 nos
  • Cumin seeds(Jeerakam) - 3/4 tsp

Instructions
  1. First whisk curd in a deep bowl.
  2. Add cumin powder, chopped chillies, sugar, salt and mix well.
  3. Stir in chopped vegetables, peanuts and mix well.
  4. Chill the mix well.
  5. Heat oil in a pan and splutter cumin seeds.
  6. Pour over the raita and stir lightly.
  7. Garnish the raita with chopped coriander leaves and serve.
  8. Vegetable raita, an Indian festival recipe, is ready.
