Vendakka Fry is a spicy, tasty and crispy vegetarian dish that you can relish with your noon day meals especially with rice and dal. This is a popular and a favorite dish in Kerala Cuisine. Vendakka Fry is one of the best side dishes you can make with this exotic vegetable. Ladies Finger Fry is unique and special with okra pieces slitted vertically, coated with a spicy aromatic mixture and fried in oil. Kids love the wonderful and colorful dish. Ladies finger is rich in nutrition, full of vital nutrients required for the body. You can term ladies finger as a power house of nutrients. Wash the Vendakka (Ladies fingers), cut and remove both up and down sides then cut them vertically as shown in the picture.
Add Red Chilli powder, Rava (Suji), Aamchur powder, Turmeric powder, Asafoetida powder, Ginger and Garlic paste and Salt into the vertically cut Vendakka pieces and mix them together. Some masala can also fill inside the Vendakka pieces and keep them aside for about 5 – 10 minutes.
Heat Oil in a Frying pan/Cheenachatti, place the masala coated Vendakka pieces in the Frying pan/Cheenachatti and cover it with a lid/plate and allow to cook the pieces on steam.
When one side of the Vendakka (Ladies finger) pieces are cooked well, turn them to other side and allow to cook that side also.
