This goes well with plain rice, roti, rasam rice etc. This is easily prepared by cooking vendakka with scrambled eggs and spices. This Kerala style stir fry is a simple dish that you could serve as an accompaniment to steamed rice or with chapatis. It is a great way to add some vegetables to an egg curry. The combination of Lady's finger and eggs is delicious with the coconut adding to the flavor. Vendakkai is a good source of potassium, vitamin C, vitamin B, folic acid and calcium. Instructions
  1. Clean, wash, (after washing, remove water from Lady’s fingers by using a dry cloth) and cut the Lady’ fingers into small pieces and keep the pieces aside for some time.
  2. Heat Oil in a Cheenachatti/Frying Pan and add the Cumin seeds into this hot Oil. Also add the chopped Ginger, Green Chilli, Tomato and Onion and stir the mix well.
  3. When colour of the mix turns into golden/brown, add the Lady’s finger pieces and stir the mix further.
  4. Then add Red Chilli powder, Turmeric powder and required quantity of Salt, and cook the Lady’s finger pieces and other ingredients in medium flame (it is advised to cover the Cheenachatti/Frying Pan with a plate), without adding Water.
  5. When the Lady’s finger pieces are cooked well, add the contents of the Eggs (Yolk and White) into this mix and stir it well for about two minutes.
  6. Add grated Coconut also and stir it further.
  7. Lady’s finger (Vendakkaaya), Mutta Thoran is ready. If necessary, this Thoran can garnish with grated Coconut and serve it for Lunch/Dinner.
