Vendakka Pollichathu is a delightful dish that showcases the culinary brilliance of Kerala cuisine.

Ingredients
  

Instructions
 

  • Wash the okra well and cut the edges. Then make 2-3 slits on it.
  • Heat oil in a pan and saute ladies finger for 4-5 minutes
  • Add ½tsp kashmiri chilly powder, ¼ tsp turmeric powder and little salt.
  • Add curry leaves and saute for few minutes.
  • Then convert it into a plate and keep aside.
  • Heat 1 tbsp oil in the same pan and add chopped ginger garlic. Saute for 30 seconds.
  • Then add chopped onion and green chilly.
  • Saute till it become soft, then add dried red chilly and few curry leaves.
  • Add kashmiri chilly powder, turmeric powder and salt as required. Saute for 1 minute to get rid of the raw smell of masala powders.
  • Now add the tomato puree and cook for another 2-3 minutes.
  • Add the cooked okra and slowly combine well. Set the flame to low. Cover and cook for 3 more minutes.
  • Run the banana leaf on fire for 2-3 seconds. The leaf would have wilted by now. Now wrap the masala in a banana leaf and heat it in a pan for 1 minute and serve.
  • Serve ot along with rice ,roti etc.
