Vendakka Puli A traditional Palakkad curry made with lady`s finger 12 nos Lady`s finger (Vendakka)Tamarind (A lemon sized ball, Puli)1/2 tsp Turmeric powderSalt (As reqd)Oil (for frying)For seasoning:-1 tbsp Oil1 tsp Mustard seeds3 - Small onions (cut into fine pieces, Kunjulli)1 tsp Fenugreek seeds (Uluva)Curry leaves (A few) Cut the lady`s finger into 1 inch pieces.Soak tamarind in hot water. Squeeze out the extract & keep aside.Grind coconut, coriander powder and red chillies to a fine paste.Heat 2 tbsp of oil in the pan.Add the cut pieces into the hot oil and fry for 5 mins or until the stickiness disappears.Pour the tamarind extract and 1 glass water and turmeric powder in the pan and let it cook until the vegetable is cooked.Add the ground extract and let it boil for 5 mins. Add salt to taste.Heat oil in another small frying pan.Splutter mustard seeds and fenugreek seeds.Fry the onion pieces till golden brown and saute curry leaves.Pour this seasoned mixture into the lady`s finger curry.:- Adjust the curry consistency to your needs by adding or reducing water. Select a pan or vessel which is non stick so that the lady`s finger is not burnt while frying. :- Optional: Add 1/2 tomato while grinding coconut. Kerala
..it is a different type of curry,though i would recomend only half of the tamarind menioned in the recipe.
