Vendakka Vattichathu is an easy and simple dish to serve as side dish with hot rice. The mildly spiced dish is tasty and full of flavors. An important tip i am providing for the dish is that ladies finger should be browned well and sauteed in sufficient oil along with the tomatoes. You can observe the sliminess of ladies finger or vendakka getting reduced. While washing the vegetable take care that you pat it dry before cutting. I usually spread out Ladies finger in a clean cotton cloth before cutting to capture all moisture. If water particles are there, the roasting process gets hindered. Brown well the vendakka pieces for that delicious and perfect Hot Ladies Finger Curry. I am also generous in oil so the sauteing process goes perfect and the slime gets reduced. In the beginning do not panic if you observe too much slime. It goes off as the sauteing process continues.

  • Cut all the veggies and keep it ready.
  • Heat 2 tsp oil in a pan and splutter mustard seeds.
  • Add ladies finger, green chilly, tomato and salt as required. Saute them till the sliminess of ladies finger reduces.
  • Now add red chilly powder and turmeric powder. Saute for a few seconds and add water and curry leaves. Cook till it is done.
  • Delicious Vendakka Vattichathu is ready.
